{"id":186,"date":"2017-10-23T17:38:34","date_gmt":"2017-10-23T23:38:34","guid":{"rendered":"https:\/\/oneswiftpint.org\/brew\/?page_id=186"},"modified":"2017-10-25T21:56:00","modified_gmt":"2017-10-26T03:56:00","slug":"dont-be-mean-to-people-a-golden-rule-saison","status":"publish","type":"page","link":"https:\/\/oneswiftpint.org\/brew\/the-journey\/brewing-recipes\/dont-be-mean-to-people-a-golden-rule-saison\/","title":{"rendered":"Don&#8217;t Be Mean To People:  A Golden Rule Saison"},"content":{"rendered":"<p>Saison Notes<\/p>\n<p><a href=\"https:\/\/www.northernbrewer.com\/documentation\/allgrain\/AG-DontBeMeanToPeople.pdf\">Northern Brewer All-Grain Kit:<\/a><\/p>\n<p>Got 5 gal water to 165.\u00a0 mashed in<\/p>\n<p>4:30pm<\/p>\n<p>Water went to 155 a few mins after \u2014 maybe a little lower<\/p>\n<p>mash in from 430 &#8211; 530 \u2014 by 5:30 the mash was @ 150<\/p>\n<p>There wasn\u2019t a whole lot of space left in the mashtun<\/p>\n<p>added ~3 gal of close to boiling water.\u00a0 got the mash close to 170<\/p>\n<p>let it rest for ~10 mins<\/p>\n<p>mashtun almost full<\/p>\n<p>skipping sparge<\/p>\n<p>recirculating initial run-off.<\/p>\n<p>Sparge finished around 6:35<\/p>\n<p>Yielded about 6.5 gallons<\/p>\n<p>Boil started (starting temp 135)<\/p>\n<p>Racked to primary around 9pm<\/p>\n<p>Og about 1.060<\/p>\n<p>Preparation<\/p>\n<p>1. Cleaned basement<\/p>\n<p>2. Got new propane<\/p>\n<p>3. Set out burner, kettles, thermos\u2019<\/p>\n<p>4. Set up a sanitizing soak in 6 gal bucket<\/p>\n<p>a.Therminator<\/p>\n<p>b.Therminator tubing from therminator to thrumometer, thrumometer, and tubing into carboy<\/p>\n<p>c.Ladle<\/p>\n<p>d.Blow-off tube<\/p>\n<p>5. Added copper manifold to mash\/lautertun<\/p>\n<p>6. Boiled water and poured into M\/Ltun to pre-heat it.<\/p>\n<p>7. Boiled more water and poured into sparge kettle to heat it.<\/p>\n<p>Mash-in<\/p>\n<p>This was a total mess.\u00a0 I tried to use brewsmith 2 but didn\u2019t really understand how to do that correctly.\u00a0 Wound up choosing \u201ccorrect for dead space\u201d which messed up the ratios \/ calculations a bit \u2014 at least it confused me.\u00a0 Didn\u2019t have a clear picture of what the water \/ grain ratio should be and so when I finally mashed in it was a bit of a mess.\u00a0 This is an area to do some advanced research next time!!!\u00a0 Ultimately, with the pre-heated MLTun it looks like the brewsmith calculations were good, but I tried to adjust and so initially overcorrected the had to chill it a bit.\u00a0 By that time I had a whole lot of mash \u2014 and had to add a whole lot more in order to get to the mashout temp.\u00a0 Need to leave myself a little more wiggle room next time.<\/p>\n<p>Sparging<\/p>\n<p>The MLTun was totally full by the time I\u2019d gotten it to the mashout temp, so I punted on sparging.\u00a0 I did recirculate a bit to get the run-off to clear up.\u00a0 Used 2 pitchers \u2014 a 1 gallon pitcher and a more conventional kitchen measuring cup.\u00a0 Gonna get a second 1-gallon pitcher for the next time \u2014 the kitchen measuring cup (maybe 1 quart?) filled up way too fast.\u00a0 Anyhow.\u00a0 Mash was kinda thin, and I let the run-off go slowly, so for the first time ever didn\u2019t have any stuck mashes.<\/p>\n<p>Boil<\/p>\n<p>This isn\u2019t terribly interesting.\u00a0 Boiled it for an hour \u2014 tried not to boil it too hard since I didn\u2019t have much over 6 gallons and I didn\u2019t want to wind up with too little.\u00a0 Noticed I didn\u2019t get any burn-marks on the base of the kettle.\u00a0 This recipe was a bit interesting in that they had a \u201cHop stand\u201d \u2014 done at ~170F, after the boil was over and the wort had a chance to chill a little.\u00a0 I did this approximately.<\/p>\n<p>Racking to primary<\/p>\n<p>Racking to primary went pretty smoothly.\u00a0 Using the screen on the inside of the kettle worked like a champ.\u00a0 Almost no gunk going into the therminator.\u00a0 Tried not to run thru the therminator too fast so as not to clog the screen.<\/p>\n<p>Yeasties<\/p>\n<p>I kinda forgot to wake up my yeasties.\u00a0 rehydrated them about 30 mins before end of boil.
