Before doing anything with your brew, whether it’s brewing day, racking to secondary, or bottling / kegging, first you want to clean everything.  Once cleaned, then you need to sanitize anything coming into contact with your wort.  (Note, you don’t need to worry about the components that you use during the mashing / boiling since the wort will be sterilized during the boil.)
