Brewed an all-grain ?Irish Heavy? (Dundalk) from NB yesterday. Was able to fix a couple problem areas from my last brew. I added a mash / boil screen to prevent hops from flowing through my therminator and gumming things up. Worked well. See the Gear Reviews page for more detail. Punched all the brew details into BrewSmith to assist with determining procedure.
Procedure
Started the overall brew at around 1pm and mixed the water / grain around 2:15pm.
13(ish) gallons water heated to ~161F — allowed to equilibrate in mashtun. Added 10 lbs of Grain. waited 10 mins and checked — temp had come down to 145 — target was 150. Added about 2 qts of boiling water and after re-equilibrating settled at around 152. (Good Enough).
Around 315 added almost 3 gallons of boiling water to get to 170F. (Not sure it was 3 gals exactly, but I’m pretty sure it was in that ballpark).
Also, had 5 gallons in ?sparge tank? at about 170F. Sparge tank (second mashtun) was cold (probably 55-60F). Heated water to 180 prior to adding to sparge tank — after equilibrating (5mins?) temp was around 170).
Began sparging. Had to recirculate ~ 1-2 Gallons of liquor before it stated running clear. (Had a stuck run-off later — had to recirc more).
With somewhere between 8 and 9 gallons in the boil kettle before stopping — boiled down the wort for almost an hour before adding the target hops. Added the fuggles 50 mins later, and 1 lb of corn sugar at 10 mins following that.
Stopped the boil and set up the kettle going into the therminator to quench the wort.
Pitched the Safale S04 (rehydrated prior to pitching) at about 6:15pm on 3/12.
OG 1.070 @ 68 F

Tasting pretty good.

Tastes pretty nice — maybe a bit sweeter than expected.
